INGREDIENTS

  • 5 eggs
  • 250g carrot puree
  • 140g sugar
  • 160g ground almonds
  • 100g corn starch
  • 2 1 tbsp lemon juice
  • 1 tsp baking powder
  • A little cinnamon
  • A pinch of salt

METHOD

  1. Beat the egg yolks with the sugar until very clear, then add the lemon juice. Keep beating.
  2. Add carrot puree, almonds, cinnamon, salt, cornstarch, and baking powder, mix well.
  3. Beat the egg whites until stiff then slowly pour into the first mixture.
  4. Pour the mixture into a greased mold, bake at 180° for 50 minutes.
