INGREDIENTS
- 5 eggs
- 250g carrot puree
- 140g sugar
- 160g ground almonds
- 100g corn starch
- 2 1 tbsp lemon juice
- 1 tsp baking powder
- A little cinnamon
- A pinch of salt
METHOD
- Beat the egg yolks with the sugar until very clear, then add the lemon juice. Keep beating.
- Add carrot puree, almonds, cinnamon, salt, cornstarch, and baking powder, mix well.
- Beat the egg whites until stiff then slowly pour into the first mixture.
- Pour the mixture into a greased mold, bake at 180° for 50 minutes.
